Envero Wines is an organisation selecting quality wines from regional varieties in Castilla y León, Toro, Rueda, and Ribera del Duero under the ‘Dextera Dei’ brand and, in Utiel-Requena, they have a couple of wines with the ‘Allblack’ trademark.
The White Wines.
- Dextera Dei, Verdejo 2024, Bodegas Ferrin y Cordero, DO Rueda, 13 % ABV.
Verdejo is the native grape of the DO Rueda, and this is a good example of a high-quality, expressive wine—a yellow straw colour, with green flashes, clean and bright. On the nose, it is very expressive, floral and herby with fennel and anise (very typical of Verdejo), citrus notes and green apple. On entry, it is very fresh, with a lively acidity. Due to the work with the lees, this wine has lots of character, is well-balanced with good volume and a creaminess which was particularly evident in the tasting. It has a long finish, which is very orderly.




2. Dextera Dei, Godello 2024, Bodegas Ferrin y Cordero, Castilla y León, 12.5 % ABV,
Godello is a native grape of Galicia; it is a variety making strong inroads in Castilla and León as well. Normally, it produces strongly aromatic wines, with white fruit flavours and citrus notes.
This wine is straw yellow in colour, clean and bright. On the nose, it shows strong aromatic notes, white fruit, apple, melon, citrus, floral, herby and mineral notes. In the mouth it is dry and fresh. A creamy texture is balanced with a lively acidity, and a long, elegant finish with a mineral touch. A characterful wine for seafood and shellfish.





The Wines from Viña de Eufemia.
A new producer from Requena, currently leasing Finca Ardal, which is close to the village of Casas de Eufemia. They produce wines from chalky and clay soils, all from old vines. We met them a couple of times at ‘small producer’ fairs and were invited to their formal opening day. Production is small, and they produce cava as well as still wines. We selected four for this tasting, which we thought had a good quality-to-price ratio.
3 .Balsa Blanco de Eufemia 2025, Viña de Eufemia, DO Utiel-Requena, 12.5 % ABV.

A White from Xarel-lo, Tardana and Macabeo. An interesting blend in which the Xarel-lo gives the structure of the wine, the Tardana adds delicacy, and the Macabeo aromatic notes and freshness. It has five months on the fine lees in stainless steel, followed by five more in Hungarian oak on the fine lees with batonnage. Production of 3000 bottles annually. Pale yellow straw in colour, with green flashes and a steely centre. On the nose, a wine with an initial medium intensity, but which opens out into a fresh and fruity white wine. Light, clean and fresh in the mouth with a good finish. Each of the varieties included contributed an element to the wine, which was both evident and notable during the tasting.
The Rosado.
4. Carrascal Rosado de Bobal 2025, Viña de Eufemia, 12.5 % ABV.
A wine from chalky soils, which brings a freshness and delicacy to the variety. This wine also has five months on the lees in stainless steel tanks. Less than 1500 bottles were produced last year.



Pale salmon rose in colour, clean and bright. Very fresh and fruity on the nose, opening out quickly as it warms up. Red fruit, cherry, strawberry and pomegranate. In the mouth, this is a fresh, fruity and much lighter style of Bobal. There is no bubble gum, no nail varnish, and instead, an elegant, smooth rosado, with light fruit, character, and a long aftertaste. A very good example of the newer, lighter style Bobal Rosado which the market is demanding.
The Cavas.
5 ‘El Pino Mariano’, Brut Nature Orgánico 2024, Viña de Eufemia, DO Cava de Utiel-Requena 11.5% ABV.
A cava de Guarda, with 12 months en rima, 100% Macabeo. Pale yellow straw colour, clean and bright, persistent fine bubbles with a persistent crown. On the nose, fresh and elegant apple and pear fruit, the period en rima has added sufficient yeasty notes, dried fruits and nuts, and a subtle floral note. In the mouth, lively, dry and well structured, the bubbles and the acidity are beautifully well-integrated, with a long, clean and slightly mineral finish.


6 ‘ Eufemia Blanc de Blancs ‘ Brut 2021 Organic DO Cava de Requena, 12 % ABV.
A cava de Guardia Superior, a blend of Macabeo with Xarel-lo, with 25 months en rima.
Pale golden colour, very fine, persistent bubbles, clean and bright. On the nose, aromatic, fresh white fruits, floral notes and more brioche and pastry from the autolysis ( the longer time en rima). On entry, full-bodied and harmonious, you note the depth and the well-integrated bubbles make it a smooth and very enjoyable cava. Lively acidity lifts it and carries forward into the long, fresh finish. This wine proved to be the most popular on the day.
Both of these bodegas were making their debut in our tasting group where we are trying now to inroduce more varieties of grapes, styles of wine and wines from alternative areas of Spain to the Valencian Community, something which is so far, proving popular!
