More than 200 speakers and 250 exhibitors will gather in Valencia to debate how gastronomy is changing—from front-of-house culture and staff well-being to sustainability, communication and generational renewal. 14 October 2026
Gastrónoma, the Mediterranean Gastronomy Fair, returns to Feria Valencia from 26–28 October 2026 with a programme designed to look beyond the kitchen. Under the banner The Voices of the Sector, its eleventh edition will bring industry leaders, chefs, journalists, scientists and communicators together across ten stages.

Why this edition matters
On a purely professional note, this year’s agenda reflects a sector in transition. Conversations will examine the changing role of front-of-house teams, employee well-being, succession and emerging talent, new dining habits, and the evolving ways food stories are communicated. A revised Monday-to-Wednesday schedule and a more functional pavilion layout aim to sharpen the event’s professional focus.
For foodies, wine lovers, amateur chefs, and all of those of us who have enjoyed previous editions, the emphasis remains firmly on the exhibitors, the cookery competitions and demonstrations, the outstanding wine tastings, introductions to new styles, new and traditional recipes, and the equipment and products to taste and buy, not to mention rubbing shoulders with some of the most famous people in gastronomy.
People and ideas to watch
Front-of-house leaders Xavi Alba of Enigma, Mariana Suarez of El Celler de Can Roca and Diego Sandoval of Coque will explore how service turns a meal into a memorable experience. The chef line-up includes Paco Pérez, Aitor Arregui, Sacha Hormaechea and Luis Lera.
Science and nutrition also feature prominently. Aponiente biologist Juan Martín Bermúdez will discuss how marine science can help make the oceans a sustainable food source, whilst nutritionist Pablo Ojeda will examine tasting menus and changing restaurant habits.
Ten stages, one broad view of gastronomy
Cocina Central–L’Exquisit Mediterrani will anchor the programme. The Regional Ministry of Agriculture Stage will focus on producers, aquaculture, seafood cookery and the relationship between farming and haute cuisine.
From bread and pastry to wine and coffee
The specialist programme spans #RealBread, where refrigeration, traditional methods and new bakery talent take the spotlight, and the Be Sweet Forum, which covers contemporary pastry, chocolate and the MMAPE master pastry championship.
Wine Experience, Entreolivos and Cooking add tastings, competitions and live activities. El Aula offers professional workshops, Espacio Mediterráneo showcases emerging talent, and the new Coffee Hub recreates a contemporary café for exhibitions and talks.
The bigger picture
With more than 28,000 m2 of exhibition space, Gastrónoma is positioning itself as both a trade fair and a forum for the industry’s most urgent questions. Its mix of established names, new voices and specialist communities reflects a clear goal: to make the event useful, current and genuinely connected to the future of food.
